1. Wrap two slices of bresaola around each grissini, and place the wrapped grissini in a plate or bowl.
2. Blend basil, olive oil, anchovies, garlic and sherry vinegar. Season with salt and pepper. Pour the sauce in the plate next to the wrapped grissini.
3. Grate Castello® Extra Matured Cheddar on the wrapped grissini and serve.
